I keep a bag of frozen veggies (usually broccoli or green beans) in the freezer at work. For quick lunches, I grab a frozen entree of Ziti Marinara, Chicken Fettucini, Meatloaf and Mashed Potatoes, etc. (I usually use Michelina's Lean brand). At lunch time, I microwave 1 cup of the frozen veggies in a bowl and then my frozen meal. When the meal is thoroughly heated ~ I spoon it over the veggies.
