I broiled salmon the other night and had three 4-oz. filets left over. I also decided to try the Walden Farms zero calorie coleslaw dressing with angel hair cabbage as a side dish. Having quite a bit left over, I decided for dinner the next night to chop a cold salmon filet and stir it into a cup of the coleslaw, then stuff that into a whole wheat pita. It was filling, very quick to prepare and tasted great - to say nothing of being very low calorie! Win-Win!!!
